Yummy Eggplant Rolls
It`s summer and it`s high time to cook yummy eggplant rolls with different fillings.
These rolls are very tasty, so you may include them into your daily ration or even make such a snack a part of the festive meal. You may use turkey liver, but I prefer chicken liver as it is much tastier and softer. As for the eggplants, I recommend you to bake them. It will save your time. There is one more plus: such a dish is much healthier than fried one.
Total calories in the prepared dish
Wash eggplants and cut off the edges. Cut them into long slices.
Salt them and leave for 15 minutes. Then wipe these slices with paper towel and lubricate both sides with olive oil. Put these slices on the grid. Bake eggplants for 15 minutes at 374 degrees. In this case eggplant rolls won`t be too fat.
Meanwhile you have time to cook the filling. Wash the liver, get rid of extra fat. Boil it in the salty water. I recommend you to add bay leaf into the pan. When the liver is ready, take it out of the pan and leave to cool down.
Cut onion into the cubes.
Fry it on the small amount of oil until golden-yellow. Then add mashed garlic.
Cook vegetables for one more minute. Then add them into the bowl with liver. Add salt, paprika, pepper.
Mix all these ingredients, using blender. There should be soft and tender mass in the bowl.
Put one spoon of filling on the edge of each slice.
Form tight rolls and stick them with the toothpick.
Put these rolls on the big plate and decorate your snack with cherry tomatoes and parsley. Bon Appetite!
