Today I want to tell you the recipe of delicious cheesecakes with a small secret. You`ve never tried anything like that before! They are thick, poofy and fragrant.   1. For cooking this dessert, you need dry cottage cheese. If it has liquid consistency, you need to press it. Cover the sieve with several layers of gauze. Put all the cottage cheese on it and press it with something heavy. Leave it for 2-3 hours. So that the cheese dries up.
  2. If the cheese is lumpy, mash it or beat up with a blender.
  3. Put all the cheese into the bowl. Salt it, add sugar, semolina, egg, coconut shaving and vanilla. That is the secret. By adding coconut shaving, we change the taste of our cheesecakes and lessen the number of flour or semolina used. They are tight and more cheezy than usual.
  4. Mix everything well and leave for 10-15 minutes.
  5. Make small cheesecakes and roll them in the flour.
  6. Fry it using the mixture of melted butter and vegetable oil. This is the second secret. Melted butter makes the taste creamy. Put cheesecakes on the preheat frying pan. Lessen the fire and cook cheesecakes until they are nice and crunchy.
  7. Then roll them over, lessen the fire, cover the pan and cook for 2 more minutes. These changes of temperature make cheesecakes thick and well cooked.
  8. When the cakes are ready, put them into the paper towel in order to get rid of fat. In several minutes put them on the plate and serve.

How to melt butter:

1. It`s recommended to use nice butter of the high quality. Choose the one with 82% of fat content. The best choice is homemade butter.
2. For melting you need a pan with the thick bottom. Otherwise the butter will burn.
3. If you don`t have the pan with the thick bottom, find two of different size. One should be smaller and the second – bigger. Fill the big pan with water and put the smaller one inside.
4. Put the piece of butter into it. Boil water and then lessen the fire. It should be minimal. Now you just need to wait until butter melts. You do not need to stir it.
5. It takes 40-60 minutes. You`ll see when everything is ready. The residue goes down and the froth comes up. Gather the froth with a sieve. Take the pan off the fire.
6. Put the sieve on the top of the second pan and cover it with several layers of gauze. Drain the butter immediately after taking it off the fire.
7. Pour it into jars and cool down. Then cover each jar with the dense lid. Keep homemade melted butter in the fridge.
