Yorkshire Muffin

Yorkshire muffin

Yorkshire tea muffin is a traditional British dessert. It`s cooked with a big amount of dry fruit, tea, whiskey and spices. This combination makes cake juicy. I`ve chosen spices to taste. Therefore, you can replace them with any other combination of herbs and spices you like. You`ll love the fragrant of such a pastry

  1. Make 300 ml. of tea and leave it for 20 minutes. Then sieve it.
  2. Wash dry cherries and raisins. Pour tea into the bowl with dry berries. Add whiskey, cover it with plastic wrap and leave for the whole night.
  3. In the morning, there will be less liquid in the bowl and your berries will be juicy.
  4. Mix eggs and sugar in the separate bowl.
  5. Add dry berries together with the rest of tea. Don`t forget to add spices: nutmeg and cinnamon. Mix everything well.
  6. Add flour and baking powder. Mix it again.
  7. Lubricate baking form with vegetable oil. Pour dough into it. Preheat the oven to 320 degrees and bake your cake for one hour.

That`s it. You may serve it with classical five-o`clock-tea. By the way, as the cake is rather sweet you don`t need to add much sugar. Cook this pastry and enjoy your meal.
