Instructions:
  1. You can buy all the specific spices in a special shop with Indian spices. When you’re ready to cook this yummy vegan dish, find a big frying pan. Pour water into it. Add all the spices. Mix everything carefully.
  2. Add tomato sauce mixed with one cup of water to the pan with the mixture. Chop tomatoes and add them into the pan as well.
  3. Wash all the vegetables and cut them into uneven pieces. Add potato and onion into the pan. In five minutes, add eggplant, pepper and celery. Wait for 3-5 minutes and add the rest of the vegetables.
  4. When the pan is loaded with the vegetables, you may pour coconut milk into it.
  5. Add salt and pepper. Cover the pan with the lid and stew everything for 5-7 minutes. If there is not enough liquid, add more water. This will make the sauce lighter and not too thick.
