Traditional molasses cookies originated more than 200 years ago. Originally they were a small cake form of Gingerbread. Instructions:
  1. Start making these cookies by preheating oven to 350 F. Mix all the dry ingredients in a large bowl. You need to combine flour with baking soda and spices. For the cookies to be extra fragrant, use all the spices recommended: cinnamon, ginger, cardamom and nutmeg.
  2. Take another bowl. Mix melted vegan butter with a portion of molasses and brown sugar. Add vanilla to taste.
  3. Combine the wet and dry ingredients in a large bowl. When there is a smooth mass in it, wrap the bowl carefully and leave it for half an hour in the fridge.
  4. Knead the dough one more time and get down to forming cookies. Divide the dough into small balls and flatten each one. Dust it with sugar. If you like combination of sweetness and light salty flavor, top it with a small amount of sea salt as well.
  5. Transfer all the cookies to a baking tray, covered with parchment and bake them for 10 minutes. It's enough for the cookies to become soft inside with a crunchy top. They should be cracked, so, if you see all those cracks don’t be afraid that you've done something wrong.
