Vegan Casserole with Herbs


  This vegetable casserole is one of the tastiest vegan dishes.   1. Peel potatoes and boil them until soft and tender. Leave the potatoes to cool down and cut them into pieces.
  2. Take a saucepan and heat olive oil in it. Cut onion into thin half-rings and cook them in the saucepan for 5 minutes. Add minced garlic and sauté everything. In a minute, the oil should become fragrant; it's high time to add white dry wine.
  3. In several minutes, add all the herbs and tomato sauce into the saucepan. Pour water into the pan and bring it to boil. Cover the pan with the lid and leave everything to simmer for 10-20 minutes.
  4. In the meantime, preheat the oven to 425 F. Drizzle the baking pan with oil. Add the layer of potato slices into it. Salt and pepper it.
  5. Now cut tomatoes into thin slices and add them as the next layer. Now cover it with the rest of potato slices and add more spices to taste. Pour the sauce over it.
  6. Cut zucchini into thin slices and cover everything with this green layer. Finally add the leftovers of the sauce and put the baking pan into the oven. Bake this dish for about an hour for your veggies to become soft. Serve this casserole immediately as it is best eaten hot!

You can change the recipe to make it perfect for you. 

  • Use vegetable broth while cooking this casserole dish instead of wine. In this case, your dinner will be healthier. 
  • If you want to make the taste of this casserole fresher, use green apples. 
  • Traditionally Greek casserole was cooked with eggplant instead of zucchini. You can follow this old-fashioned recipe. The dish will still be very tasty.
