Instructions:
  1. Start cooking baked potatoes with preheating the oven to 400 F. In the meantime wash potatoes very carefully and dry them, using aper towels.
  2. Cut each one in two pieces. Sprinkle each half with the olive oil. Add salt and pepper. Transfer potatoes to baking tray, covered with the parchment. Bake your raw potatoes for about an hour.
  3. Take the tray from the oven and leave vegetables to cool down. It will take 10-15 minutes.
  4. Now you need to scoop out the flesh. Leave the skins with the thin layer of the flesh.
  5. Sprinkle the skins with another portion of olive oil, salt and pepper. Bake them for 10 minutes.
  6. Mix mashed potato mass with sour cream and milk. Add more spices to taste.
  7. When the skins are ready, take the tray out of the oven and add vegan cheese into the middle of each potato. Top cheese with creamy potato mass. Add one more cheesy layer. Bake everything for 10 more minutes.
