Originally borstch is one of the most important East European meat meat - desc learn more... soups. It is always cooked with pork (rarely with beef or poultry). However, if you are a vegan or simply prefer vegetable diet, you can give this dish a chance and cook vegan borstch.
This cabbage soup with tomato paste can be made in less than an hour. However, the result will impress the whole family!

Instructions:
  1. To begin with, preheat the pan with the thick bottom. Add 1 tbsp of olive oil. Stir in grated carrot, beets and chopped tomatoes.
  2. Sprinkle everything with 2 tbsp of cold water. Add fresh lemon juice. Mix everything carefully and cook everything for 20-30 minutes over low heat.
  3. Chop potatoes. Add them to the pan with preheated vegetable broth. Cook for 10-15 minutes. Add 1 tbsp of salt. Add chopped cabbage and all the fried vegetables. Simmer everything for additional 20 minutes.
  4. Preheat frying pan one more time and cook chopped onion in the leftovers of the vegetable oil. It should become light golden and very soft.
  5. In 2-3 minutes transfer fried onion to the pan with your soup. You`re almost done!
  6. Salt everything to taste if needed, add bay leaves and black pepper. Continue cooking this soup for 10 more minutes.
  7. Turn off the fire and cover the pan with the lid. Leave it for 5-10 minutes before serving for the taste of the dish to be richer. When you`re ready to serve borstch, remove bay leaves from the pan.

Serve this yummy European soup with a portion of fresh sour cream. Add fresh herbs to taste to make your meal brighter. You can replace traditional sour cream with vegan cashew sour cream. The taste of the meal will still be great. Bon Appetit!
