Traditional Georgian Khachapuri


Amazing khachapuri with suluguni and egg is one of the traditional Georgian dishes. It looks amazing, however, you may easily cook it at home. Today I will tell you how to do it.

  1. Sift the flour through the sieve.
  2. Add dry yeast, salt and sugar. Mix everything well.
  3. Take a small pan and mix milk with water in it. Heat this liquid. It should be warm, not hot. Pour this liquid into the bowl with dry ingredients and mix everything, using spatula.
  4. When the dough is smooth, start kneading it.
  5. Put the dough into the dry bowl and cover it with the plastic wrap or a towel. In an hour you need to add oil into the bowl.
  6. Boil 3 eggs and when they are already cold, cut each one into small cubes.
  7. Grate suluguni cheese and brynza or any other salty cheese.
  8. Mix 2 types of cheese and put 1/3 of this mass into the separate bowl.
  9. Add chopped eggs into the bowl with the rest of cheese.
  10. In an hour you`ll need to add 3 tablespoons of the oil into the bowl with the dough. Knead itr until soft.
  11. Now you need to form “boats”. Cover the table with the wheat flour. Divide the dough into the 4 parts. Form balls. Flatten one part of the dough.
  12. Cover the edges with grated cheeses.
  13. Roll the dough for the cheese to be inside the edges.
  14. Fill the “boat” with ¼ of the cheese, mixed with eggs.
  15. Cover the tray with the flour and put all the “boats” on it. Leave them for 5 minutes.
  16. Meanwhile you`ll need to melt a piece of butter. Use it for lubricating your khachapuri before baking. You may also use whipped yolk as well. Put the tray into the oven for 10-15 minutes. It should be preheated to 428 F.
  17. Take the tray out of the oven. Separate yolks and whites. Add one yolk into the middle of each “boat”. Bake khachapuri for 5 more minutes.

Add a piece of butter on the top of each “boat” before serving. Georgian khachapuri should be eaten hot.Bon Appetite!
