This dish is one of the symbols of Thailand. Tom yum is traditionally cooked with shrimp. Literary this combination of Thai words mean that this is boiled sour salad. Tom yum is very sour and spicy. Usually it is made of fresh ingredients.

Instructions:
  1. Fill the pan with 3 cups of the water. Bring it to boil. Add all the shrimp heads. Boil everything for 10-15 minutes. Discard all the heads and use this stock to cook tom yum.
  2. Add fresh lemongrass and lime leaves. Chop chilies and add them to the pan as well. Add dry shiitaki mushrooms. Bring everything to boil. Add boiled and peeled shrimp along with the fish sauce.
  3. Finally add lime juice to give your dish light sour flavor. Boil everything for 3-5 minutes.
  4. Serve the dish immediately.

Homemade tom yum is very tasty. If you are not a  big fan of the seafood, you can use chicken stock instead of the shrimp broth. The result will still be yummy.
