Tiramisu. Tender Italian Dessert with Chocolate

Tiramisu is tender and airy Italian dessert. People love it for the combination of the sweet creamy taste and strong coffee.  Nevertheless, some people replace mascarpone with Philadelphia cheese. However, in this case the taste of the dessert won’t be that tender and creamy. Savoiardi is also an important ingredient. If you cannot find it in the shops, you can make these biscuits yourself. The only ingredient you can skip is cognac. If you are planning to make it for a driver or share a piece of the dessert with kids, you can make it without alcohol.

Instructions:
  1. Prepare all the ingredients. Make a strong espresso and leave it to cool down.
  2. Wash the eggs carefully. Break each one and separate the yolks and whites. Put the bowl with the whites into the fridge.
  3. Add sugar into the bowl with yolks.
  4. Whip the yolks with sugar until the mass in the bowl is white. If there is too much sugar left, continue whipping.
  5. Put the whipped yolks into the bigger bowl. Add mascarpone cheese.
  6. Mix these two ingredients with the mixer until the mass is smooth.
  7. Now take the bowl with the whites out of the fridge. Add a pinch of salt. Whip everything slowly for 3-7 minutes.
  8. If you’re unsure as to whether your eggs are whipped well, turn the bowl over.
  9. Mix whites and yolks in the big bowl. Now take a spatula and slowly mix these ingredients.
  10. There will be tender and airy cream in the bowl.
  11. Now pour cold espresso into the bowl. Dip the cookie into this fragrant liquid. If you’re cooking Tiramisu with cognac, add this drink into the bowl with coffee as well.
  12. Wait for a second or two and take the biscuits out of the bowl. Otherwise, your biscuits will be too wet.
  13. Fill the tray with half of these biscuits. You can follow my recommendation and make the dessert in one big tray. It will be easier and quicker. However, you can make it in small trays as well or on cute plates.
  14. Cover the biscuits with a layer of the tender cream. Add the next layer of biscuits.
  15. Now you’ll need to cover them with the leftovers of the cream. Leave the tray in the fridge for 6-12 hours.
  16. Finally, dust your dessert with the cocoa powder. If you like, you can replace it with grated chocolate.
