Instructions:
  1. Take a small bowl and mix an egg yolk with 1 tablespoon of sugar. This mass should be frothy. Pour in milk. Sift the flour and add it into the bowl together with baking powder. Mix until this mass is smooth.
  2. Take another bowl and whisk 2 egg whites with cream of tartar. This mass should also become frothy and pale. Slowly add sugar, whisking this mass. This mass should be thick enough to hold a peak. Still, keep in mind that it is very important not to over whip whites.
  3. Now you need to combine whisked yolks with whites. Add whipped white mass into the bowl with yolks. Mix everything until the mass is smooth enough. It will be thick and light.
  4. Preheat a frying pan and sprinkle it with the small amount of olive oil.
  5. To form high round pancakes we recommend to use an ice cream scoop for forming them. If the pan is not too large, cook 1 or 2 pancakes at a time.
  6. Cover the pan with the lid and cook pancakes for about 5 minutes. Open the lid and add more batter on top of the pancake. Continue cooking them for 4 more minutes. Gently flip the pancake and cook it for 3-4 minutes. Your pancake should have a light color and be cooked through.
