Instructions:
  1. To begin with, preheat your oven to 325 F.
  2. Cook homemade almond dough. Crash almond, using food processor. Add sugar powder and mix everything in the food processor for 2-3 minutes.
  3. Take middle-sized bowl. Whisk egg whites, using powerful mixer. This mass should be airy and foamy. Add salt on the tip of the knife. Continue whipping. If you like sweeter desserts, ad 2 tablespoons of sugar into the same bowl.
  4. Stir in 1 tsp of violet extract and 2 drops of food coloring. Beat everything for additional minute.
  5. Slowly stir in dry almond dough. Now fill pastry bag with this tender mass. Form 40-50 small cookies on the baking tray, covered with parchment.
  6. Bake them for 5-7 minutes. It`s enough for the dish to be well-baked but not to dry. Now take the tray out of the oven and leave your tender meringue to cool down.
  7. In the meantime you can cook creamy violet filling. Put soft butter into the bowl and beat it with the powerful mixer. Add sugar and continue whipping everything.
  8. Add vanilla and violet extract into the bowl. Brighten this mass adding violet food dye. Mix all this mass one more time.
  9. Stir in cold milk carefully. This will make your dessert tenderer.
  10. Now it`s time to mix all the ingredients together. Fill pastry bag with light-violet filling.
  11. Turn each macaron carefully and decorate it with the filling. Add another cookie on the top of it, forming little sandwich.
  12. Leave these violet cookies in the fridge to cool down. In an hour you can serve them to your friends.

 You can store these cookies in the container for about a week. Serve this dessert as an appetizer or present your friends with a pack of fresh homemade cookies. They will definitely like this dessert. Bon Appetit!
