Tender Italian Bread: Cooking Ciabatta at Home


Italian bread is tender and airy. This softness is hidden by the crunchy crust. Such a combination makes this pastry really unique. To cook this dish you need to be patient and have enough time to work with the dough a lot. However, the result is definitely worth it. Your friends and family will eat fragrant ciabatta in a minute!

  1. First, you need to cook the fermentation mixture. This is the longest process. If you do everything right, your bread will be airy. Keep in mind, that this mixture should be left untouched for 24 hours. So, find enough time and plan your day.
  2. Take a big and deep bowl. Sift 1/3 of the flour into it. I recommend you to do it for several times. Add 1/3 of the yeast and warm water.
  3. Mix everything for 10 minutes. The mass should be rather thick. Cover the bowl with the plastic wrap and towel. Leave everything for 20-24 hours. Do not unwrap this mass.
  4. Next day you may get down to work with the dough. Use the mixer. Sift 2/3 of the flour into the big bowl. Add the rest of the yeast, salt and olive oil. Then you need to add the fermentation mixture. Do it slowly and carefully. Add the rest of warm water.
  5. Now whip everything, using mixer for 10 minutes. Even if the mass is too liquid, do not add more flour. The dough should be liquid, tender and elastic.
  6. All you need now is to wait. Take bigger bowl, cover it with the olive oil and put the dough into it. Cover the dough with the plastic wrap and towel again and put the bowl inti the warm place. Wait for 1.5 – 2 hours.
  7. Dust the table with the thin layer of the flour. You may divide the dough into 4 parts and cook classical bread or bake one huge loaf. Stretch the dough and fold it. Do it for several times.
  8. Now you need to form the bread. It should remind you of the low square.
  9. Put your ciabattas into the form, covered with plastic wrap. Dust them with the flour and leave for an hour.
  10. Preheat the oven to 482 F. Put ciabattas into the hot tray. It`s also recommended to put the bowl with water under the layer with the tray.
  11. Change the temperature to 428 F and bake your bread for 20 minutes. Do not open the oven while cooking ciabattas.

That`s it. Your fragrant bread is ready!

Ciabatta may be used for cooking sandwiches and hamburgers. You may experiment with the filling. The easiest way to improve the taste of ciabatta is to add fragrant herbs. You may also use sun-dried tomatoes, cheese and olives.
