  3. In 30 minutes remove vegetables from the freezer and leave in the bowl for 30 more minutes.
  4. Mash bread carefully in the bowl of the food processor. Add veggies to the bread and pulse everything one more time. Add salt and pepper to taste. Pour in wine vinegar and vegetable oil. Blend everything one more time. When the soup is smooth enough, serve it in the glasses or small bowls. Top each portion with fresh chopped herbs and sprinkle with another portion of the olive oil.
