Stuffed Eggplants with Vegetables in the Oven

It may be fried, baked, turned into yummy rolls or even used while cooking a salad. Today I will share with you the recipe for yummy stuffed eggplants.

  1. First, you`ll need to prepare all the ingredients.
  2. Use the meat grinder to mash pork.
  3. Add salt and spices to taste.
  4. Cut each eggplant in two pieces.
  5. Get rid of the flesh, forming boats.
  6. Cut this flesh into small cubes. You`ll use it to cook yummy filling later.
  7. Now you`ll need to peel and chop an onion.
  8. Pour vegetable oil into the pot.
  9. Heat oil and add onion into the pot. Fry it for several minutes.
  10. As soon as onion is ready, add minced meat and fry these ingredients for several more minutes.
  11. Take the pan off the fire.
  12. Cook the rest of the ingredients for the filling. Fry cubes of eggplants in the leftovers of the fat.
  13. Cut red bell pepper into cubes.
  14. Add this vegetable into the pan and continue cooking these ingredients for about 3 minutes.
  15. As soon as all the vegetables are ready, add minced meat and onion into the pot as well.
  16. Peel two cloves of garlic and chop them into tiny cubes.
  17. Add it when the meat is almost ready.
  18. Grate mozzarella cheese on the coarse grater.
  19. Add a half of the cheese into the pan with the filling. The rest of the cheese will be used later.
  20. Take a form and cover it with the vegetable oil.
  21. Fill it with the empty halves of the eggplants.
  22. Now you`ll need to fill each vegetable with minced meat.
  23. Dust them with the rest of grated mozzarella.
  24. Pour boiled water into the pan with eggplants.
  25. Bake vegetable snack for 40 minutes at 356 F.
