Instructions:
  1. Preheat frying pan with the oil. If you can use grill frying pan. Add corn to the pan. Time of cooking depends on whether you use fresh corn or not. Fresh corn should be fried for 20 minutes.
  2. Transfer corn to the bowl. Melt butter over a medium heat. Add chopped onion, celery, jalapeno pepper and garlic. Sprinkle dry oregano over all these ingredients.
  3. Cook everything for about 7 minutes until all the veggies are soft.
  4. Pour in milk and cream. Add slices of potatoes.
  5. Bring everything to boil. Cover the pan with the lid and reduce the heat. Simmer your soup for additional 25 minutes.
  6. Transfer 2 cups of the soup to the bowl of the blender and beat it until smooth. Add it to the pan with the rest of the soup again. Add salt to taste. If you want your soup to be more spicy, add chili powder.

Serve this rich delicious soup with crunchy tortillas or fresh green salad. You can also decorate each portion with lime wedges and fresh cilantro. It`s also a good idea to add slices of avocado or top everything with grated cheese.
