Soft and tender strawberry cheesecake is cheap but really amazing. You won`t need to search for expensive cream cheese if you decide to use this recipe. Use simple ingredients and enjoy the taste. By the way, this dessert is good-looking. It consists of several bright layers and the layer of jelly. I also like to use berries for decoration this cake. In this recipe I used strawberries. Still you may replace it with any other berries or fruits. They will change the taste of this cake, so don`t be afraid to experiment with combination of ingredients!

Instructions:
  1. To begin with, grind biscuits, using a blender.
  2. Mix these crumbs with butter well. 3. Put this mixture into the form and flatten. There should be a thin layer. Still, if you want it to be even thinner, take less ingredients. Put it into the fridge.
  3. Now it`s time to make tender soufflé. Take 3 bowls and fill each one with 3 teaspoons of gelatine. Add cold water and leave them for several minutes. 5. Put all the cottage cheese into the bowl of the food processor. Add cream, sugar and vanilla. Mix everything until smooth. There shouldn`t be any lumps. Actually, it depends on the quality of cottage cheese. If it`s rather dry, you`ll need to add more cream. If the cheese itself is wet, add les cream.
  4. Divide this cheese mass into three parts. I do it in order to dye the layers in different colours. Put two parts into the fridge.
  5. Take the 3d part and start dying. I wanted my cheesecake to be pink. There will be three shades of this colour. Take one part of cheese mass and mix it with 1 part of gelatine. Add the darkest shade of gelatine into this bowl. The mass will become more liquid, but it`s okay.
  6. Pour this cheese mass into the form and put it into the freezer for 15 minutes. You may also put it into the fridge for half an hour.
  7. Take the 2nd part of this cheese mass and add lighter food dye and gelatine, preheated on the water bath. You may pour this mass on the top of the previous layer when it freezes a bit. Then put the form into the freezer or into the fridge again.
  8. Repeat the same with the last layer, trying to make is the lightest. By the way, if you don`t have different shades of pink, you may add less drops of food dye into each bowl. When you`ve finished making the 3d layer of cheesecake, put it into the fridge again.
  9. Now you need to make fruit jelly. Mix gelatine and water and leave this mass for several minutes.
  10. Put berries into the pan, add sugar and boil it. Then turn the fire down and cook it for 10 minutes, stirring constantly. By the way, you may use frozen berries as well. I recommend defrosting them beforehand and then boiling.
  11. You need to rub these boiled berries through the sieve. Add gelatine into this warm mass. Leave it to cool down.
  12. Pour these mashed berries on the top of cheesecake. Put it into the fridge for 4-5 hours.

Cut this cheesecake with the sharp knife and put the slices into the big plate. I recommend using hot knife. In this case, the slices are even and the layers look good. Decorate this good-looking dessert with mint leaves and fresh berries. This tender cake looks amazing and tastes great. If you want to add more decoration, you may use chocolate topping or cover it with sweet sauces. Use your fantasy and my recipe to create perfect cheesecake for your family and guests.
