Instructions:
  1. Cut raw vegetables. Peel onion and garlic. Wash spinach and get rid of damaged leaves.
  2. Put onion and garlic on the paper towel and dry. Cut vegetables and greens. As for the onion, you may cut it into stripes or half-circles. Chop garlic. Spinach leaves may be left untouched. However, you may also cut them into 2-3 parts. Put cut vegetables and greens into separate plates. Prepare the rest of ingredients: olive oil, salt, cream, black pepper and broth. You may use vegetable broth if you like.
  3. Turn on the fire and put a pan filled with 1 tbsp. of olive oil. When it heats, add slices of onion into the pan. Stew it until it`s golden-yellow. For it not to burn, you need to stir it constantly. In 3-4 minutes, you may add mashed garlic. Stew vegetables for 1 minute. You also need to stir everything for the garlic to give its fragrant to the rest of ingredients.
  4. Then add spinach leaves into the pan. Dust everything with black pepper and salt and stew. All the vegetables should be soft at the end. The whole process will take no more than 3-4 minutes.
  5. Now you need to add the broth into this pan. Boil it and then turn off the fire. Leave this soup to cool down.
  6. Then you need to pour it into the bowl of the blender. Mix it until smooth. You`ll need to beat up this mass on the highest speed for 2 minutes. Then pour it back into the pan and boil for 1-2 minutes.
  7. Add cream into the pan with hot liquid. Mix everything with the tablespoon until this soup is smooth. If you need, add more salt and pepper. Preheat this soup but do not let it boil.
  8. Turn the fire off and cover the pan with the lid. Leave it for 4-5 minutes. Now you`re done. Pour this soup into separate bowls and serve it to table.

Spinach cream soup should be served hot. You may add croutons to the plate. One more interesting idea is to add chopped greens or grated cheese into each plate with hot soup. If you want your meal to be more nutritious, you may add pieces of fried or boiled meat into the plate.
One more important thing is that you may add any spices and herbs you like. It depends on your taste. You may also add more various vegetables. It may be carrot or mushrooms for example. All these ingredients may change the taste of your dish and make it even better.
