Spicy Ukrainian Sausage for Dinner

  1. Choose fresh and high-quality meat. We recommend mixing fat pork and lean beef. Cut part of the meat with the knife and mash the rest of it, using a powerful blender.
  2. Mix everything carefully. Add paprika, salt and pepper to taste. If you like, you can add dry herbs to make the taste of the dish richer.
  3. Grate garlic and add it to the rest of ingredients. Mix everything one more time. Pour in ice cold water. In this case, there will be no lumps in the bowl. You can also replace it with cold milk. In this case the taste of the dish will be tenderer.
  4. Now cover the bowl with minced meat with the plastic wrap. Leave everything in the fridge for 12-18 hours.
  5. Next day stuff the casings with this spicy mass. The process isn`t that easy, however if you practice a little, you`ll cope with the process easily. First, soak them in the cold water for a half an hour. This will make them softer.
  6. The easiest way to stuff them is to use a sausage stuffer. You can also do it manually with your thumbs. Be careful not to overfill the casing for it not to break.
  7. Fix the edges carefully and form tight rings. Now you can get down to cooking it. Preheat the oven or a grill and cook sausages for 20 minutes from both sides. If you`ve cooked too many sausages, you can leave a part of them in the fridge or even freeze them.
