  1. Fill a pan with 1.5 l of water and heat the water. Prepare all the main ingredients. Peel the carrot, onion and ginger. Cut the carrot and ginger into large chunks. Cut the onion into 4 slices and add all of these ingredients into a pan, to make a bouillon. Slowly simmer this bouillon on a low heat. Cook it for 35-40 minutes. Do not add salt and pepper.
  2. While the vegetable broth is being cooked, prepare the rest of the ingredients. Cook hard-boiled eggs. Wash them with the cold water and peel them carefully. Defrost the shrimp (if frozen) and peel them as well.
  3. Wash the mushrooms thoroughly and cut them into thin slices. Preheat the pot with the one tablespoon of the olive oil. Fry the mushrooms quickly. Put the halves of the eggs, fried mushrooms and defrosted shrimp into separate bowls.
  4. Wash a small chicken fillet and get rid of the fat. Tenderize it. Grill this fillet in a pan for 8-10 minutes. Put the fillets into the pot and add 2-3 spoons of the vegetable broth. Stew the fillet in the pot, covered with a lid for 25-30 minutes. After that, take the fillet out of the pot and leave it on a plate to cool down. Cut the poultry into slices.
  5. This dish is best served with fresh herbs. I recommend using fresh cilantro and mint. Chop the herbs and put them into each separate bowl.
  6. Cut fresh cucumbers into long thin slices. Wash the red-hot chili pepper and cut it into thin circles. Cut the lime into slices. The citrus will be added to the dish before serving.
  7. As for the laksa sauce, you can buy this sauce as opposed to making it at home. On average, one standard package of laksa sauce will be needed for 3-4 bowls of the dish. This is a very spicy sauce, so use it in moderation if you do not like spicy food.
  8. Preheat a pan with 2 tbsp of olive oil. Add the sauce and fry everything for 1-2 minutes. Add 3 large spoons of the bouillon. Slowly pour coconut milk into the pan.
  9. Add salt and lime juice. The broth will be a bit sour.
  10. Add rice noodles into the pan with the broth. Cook them for 5-6 minutes.
  11. Traditionally, this meal is served in a generous-size plate or a deep bowl. Add rice noodles to the plate / bowl. Cover this layer of noodles with the mushrooms, shrimp and the chicken fillet. Decorate the dish with parts of the hard-boiled egg. Add chopped spring onion, mint and slices of cucumber. At this point, to add slices of hot pepper and lime.

All that is left to be done is to pour the hot broth on top of the rest of the ingredients. Serve this yummy dish.
