 Mexican chorizo is famous all over the world. There are various recipes for these well-seasoned pork sausages. The best chorizo recipe is definitely the simplest one! If you like, you can tweak the recipe, adding more or less spices. What is more, if you avoid eating pork, you can use the same recipe and cook delicious chicken chorizo sausage instead.

Instructions:
  1. Mash 2 cups of pork, using a meat grinder. Cut the third one into small pieces.
  2. Mix the pork in a big bowl. Chop parsley and add it into the bowl with the minced meat.
  3. Take another bowl and mix vegetable oil and paprika in it. Add these ingredients into the bowl with minced meat and mix everything using your hands. Wear gloves so that your hands don’t become red after touching the bright paprika.
  4. Mix 1 tablespoon of the vegetable oil with the pepper. Add these spices as well as salt into the bowl as well. Mix everything and form long sausages. Cover them with plastic wrap.
  5. Put the sausages onto a tray. Add enough water to cover the sausages. Bake them in a preheated oven for half an hour. In the meantime, prepare the vegetables. Cut red bell peppers into long thin slices. Slice onion into semi-circles. When the sausages are ready, unwrap them and cut them into 3 small pieces.
  6. Preheat a frying pan and add 1.5 spoon of vegetable oil. Add the slices of sausage into it. Crush garlic and add it into the pan together with the rest of the paprika.
  7. Take the sausages out of the pan and put them onto a plate. Use the leftovers of the fat to fry the onion. When it’s ready, put it on the plate with the sausages and get down to cooking the pepper. Put it into the pan and add salt, sugar and wine vinegar. Cook it until the vegetable is half-cooked.
