Spicy Chili Bean Soup
This is a healthy vegetarian stew that is perfect for vegans and meat-lovers, who want to eat something unusual. It`s can be eaten for lunch or dinner, as the dish is rather nutritious and you`ll feel full without overeating.

Soak beans in the cold water and leave them for the whole night. Then drain them off and put into the pan with water. Boil beans for 10 minutes. Then turn the fire down and wait for about two hours.
Chop onion and carrot. Mash garlic. Take chili pepper and get rid of seeds. Chop it as well. Add all these vegetables into the pan together with vegetable broth. Boil it and then cook for 30 more minutes in the pan, covered with the lid.
Then get a half of the vegetables together with broth and mash them using blender.
Put this mass into the pan again. Add peeled and cut tomatoes and thin slices of celery. Stew for 10-15 minutes until celery is soft. Add a bit of water if needed.
Add salt and pepper to taste. Don`t forget about chopped cilantro or parsley.
