Spanish Tortilla with Rosemary

Visiting Madrid, tourists often want to taste traditional “Spanish tortilla”. However, locals do not call this dish like that. You may find it in most of restaurants and it`s called “tortilla de patatas” (tortilla with potato). It is big soft omelette with potato and onion. This is one of traditional dishes of Spanish cuisine. Locals eat it for breakfast and as a snack. They may also add other veggies into this dish. It may be also cooked with seafood or meat. One more popular idea is to combine several omelettes with different fillings and supplement everything with yummy sauces.
Today we`ll share with you the recipe of classical tortilla with rosemary. It`s easy to cook and much tastier than classical omelette.

Instructions:
  1. Wash and peel potatoes and cut them into thin strips.
  2. Then wash these slices again in order to get rid of extra starch. In this case potato slices won`t stick to each other. Dry potato slices, putting them on the towel.
  3. Cut onion into thin circles. You may divide it into 2 parts.
  4. Preheat the frying pan and pour olive oil into it. Fry it until the onion is soft.
  5. Add potato into the pan and mix it with onion. Continue frying for 10-15 minutes.
  6. Break eggs into the bowl and whip them. Take one sprig of rosemary and chop it.
  7. When potato is almost ready, add salt and pepper. Add chopped rosemary and nutmeg.
  8. Add fried potato into the bowl with whipped eggs. Mix everything well.
  9. Put this mass into the frying pan. It should be washed after frying potato and dried. Lubricate it with olive oil again and start cooking.
  10. Cover the pan with the lid and fry tortilla for 3-4 minutes.
  11. When the dish is ready, cover tortilla with the plate and turn the frying pan. Then put it into the pan again, trying to fry it from the other side. In this case your tortilla won`t break.
  12. Then put it on the plate and decorate this dish with chopped parsley and sour cream.

You may also bake tortilla in the oven. It`s even easier. You need to whip eggs, mix them with chopped onion and potato. Pour this mass into the baking form, lubricated with the butter. Bake this dish at 392 degrees for 20 minutes.
