Instructions:
  1. Prepare the tripe beforehand. Wash it carefully and leave in the bowl with the vinegar and sliced onion. This will help you to get rid of the unpleasant flavor. Next morning you`ll need to prepare the rest of the ingredients.
  2. Cut lungs into the big pieces and boil them for 1.5 hour in the salty water.
  3. Meanwhile boil two big hearts. You do not need to cut them.
  4. Slice liver into cubes and put them into the bowl with the milk. Leave it for several hours in the fridge.
  5. Mash boiled lungs and hearts, using a mince grinder.
  6. As for the liver, you do not need to boil it. Just chop it with the sharp knife.
  7. Preheat the pan and put the piece of lard into it. Add salt and pepper.
  8. Chop 2 big onions and fry them in the pan with the melted lard.
  9. Add chopped liver into the pan with the fried onion and stew it for 10 more minutes.
  10. Now it`s time to prepare the oatmeal. Mix them with the salt, pepper and herbs. Add into the pan.
  11. Put all these ingredients into the big pan. Add mashed heart and lungs. Stew everything for 10 minutes. If the mass is to dry, add the broth.
  12. When you`re almost done, add balsamic vinegar.
  13. Stuff the tripe with this mass and sew up all the holes.
  14. Put the haggis on the tray and bake it for 10 minutes in the preheated oven.

When the dish is ready, pour the whole cup of whiskey on it. If you don`t know what to serve with haggis, choose mashed potato or turnips. Bon Appetite!
