Scottish Haggis with the Edible Offal

Nutritious haggis is a yummy Scottish sausage, stuffed with edible sheep’s offal. Usually tripe, lungs, heart and liver are used. To make the filling juicer, oatmeal and onion are added as well. And of course, don’t forget about the haggis seasoning. This is the trick to making this huge sausage so tasty and unique.

If you dream of making haggis, but do not eat meat, you may cook a vegetarian version of this dish. It is always based on beans.

Instructions:
  1. Prepare the tripe beforehand. Wash it carefully and leave in the bowl with the vinegar and sliced onion. This will help you to get rid of the unpleasant flavour. Next morning you’ll need to prepare the rest of the ingredients.
  2. Cut the lungs into big pieces and boil them for 1.5 hour in salty water.
  3. In the meantime, place two big hearts to boil. You do not need to cut them up.
  4. Slice the liver into cubes and put them into a bowl with the milk. Leave it in the fridge for several hours.
  5. Mash the boiled lungs and hearts, using a mince grinder.
  6. As for the liver, there is no need to boil it. Just chop it up with a sharp knife.
  7. Preheat the pan and put the piece of lard into it. Add salt and pepper.
  8. Chop 2 big onions and fry them in the pan with the melted lard.
  9. Add chopped liver into the pan with the fried onion and let it stew for 10 more minutes.
  10. Now it`s time to prepare the oatmeal. Mix it with some salt, pepper and herbs. Add it into the pan.
  11. Put all these ingredients into the big pan. Add the mashed heart and lungs. Stew everything for 10 minutes. If the mass is too dry, add some broth.
  12. When you’re almost done, add balsamic vinegar.
  13. Stuff the tripe with this mass and sew up all the holes.
  14. Put the haggis on a tray and bake for 10 minutes in a preheated oven.

When the dish is ready, pour the whole cup of whiskey on it. If you don`t know what to serve with haggis, choose mashed potato or turnips. Bon Appetite!
