  1. People often avoid buying unsalty fish, `cause they think this process to be to difficult. However, you may cope with it in 10-15 minutes! It`s very important to choose fish fillet instead of the whole fish. In this case it will be much easier for you to cope with cooking.
  2. You may choose any type of red fish, you like. It may be salmon, trout, redfish, pink salmon, chum salmon, etc. Peel fish and wash it. Wipe the fillet, using a paper towel.
  3. Put slices of fish into the deep form. Dust everything with the sea salt and sugar. If you like, you may add all your favourite spices. Keep in mind, they should taste great in combination with the fish. I prefer to use bay leaves, cilantro, pepper and fresh herbs.
  4. Cover the fish with something heavy and add the layer of plastic wrap. Leave everything in the warm place for several hours.
  5. Then you`ll need to get rid of the extra salt. Put red fish into the fridge for 1.5 – 2 hours. I can share with you another simple idea. Leave it in the fridge for one day and get down to marinating next morning. Mix vegetable oil with salt, sugar, onion and spices. Pour this liquid on the top of the fish and leave everything for 8 hours.
  6. Next morning your fish will be ready.

It`s important to get rid of the extra liquid before serving. Wipe the fish, using a paper towel and slice it.
This homemade salty fish may be used for cooking sushi, rolls, sandwiches, stuffed pancakes, snacks and so on. Enjoy the taste!

I always freeze fresh fish (pink salmon, chum salmon) to get rid of parasites. And at any time we add salt. For example, 2 pieces.
