 To cook perfect dish, you need to buy qualitative meat. It should be fresh; we recommend you buying meat that wasn`t frozen. Keep in mind that fresh and healthy meat always has pink color and never smells. The best choice is farmed rabbit meat. If you choose wild rabbit, you`ll need to cook it for longer period of time. And it will still not be that tender.

 If you`ve bought frozen rabbit, you`ll need to defrost it carefully. Transfer it to the deep dish and leave it in the fridge overnight. If you can, control the amount of water in the dish. If there will be water, meat will also have watery taste at the end.

 Another important thing is to choose good frying pan. We recommend choosing iron-cast skillet. In tis case your meat won`t burn. It will be fragrant, tender and have light caramelized taste.

Instructions:
  1. Start with cutting your defrosted rabbit into pieces. Wash them carefully and transfer to the large pan.
  2. Preheat large frying pan. Add vegetable oil into it. In 30 seconds, you can add rabbit meat into it. Cook it from both sides for 2-4 minutes. Meat will have light brown color and will become tenderer. It is very important not to overcook your rabbit.
  3. Season rabbit with salt. If you like, you can add fresh ground pepper and paprika. Reduce heat and add chopped garlic to the pan as well. Cook rabbit for 3 more minutes.
  4. In the meantime mix dry white wine with vegetable stock. We do not recommend using chicken broth for it not to give your dish strong smell of poultry. Pour this liquid into the pan with meat. Reduce heat. Sauté everything for about 15 minutes.
  5. Turn slices of meat off and continue cooking them for additional 10 minutes.

Serve this meat hot or warm. Decorate each portion with fresh thyme. In Italy this dish sometimes is served with dark chocolate sauce. However, you can choose something simpler. It may be creamy white sauce or fragrant spicy sauce. Rabbit meat can be also served with polenta or a large plate of pasta.
