Instructions:
  1. Start cooking this dish with making crunchy granola. Preheat the oven beforehand. Cover the trays with the parchment.
  2. Take large bowl and mix all the toppings in it. Add brown sugar, 2 tablespoons of maple syrup, olive oil and sea salt to this bowl. Pour in 2 tablespoons of cold water.
  3. Stir in oats, crashed almonds and sesame seeds. Mix everything carefully. All the ingredients should be coated with this sweet mass.
  4. Now it`s time to bake granola. Transfer this sweet mass to the baking sheets. Form even and thin layer. Cook granola in the preheated oven for 7-15 minutes. Granola should become crispy and have light-golden color.
  5. When this part of the dish is ready, take the tray out of the oven. Leave granola to cool down for 20 minutes. By the way, if you`ll have the leftovers of granola after making your easy breakfast, you can store them in containers in the fridge. It can last for 1-2 weeks.
  6. Now it`s time to cook baked peaches. Wash them carefully and dry with paper towels. Cut each one in two halves and get rid of the pit.
  7. Transfer all those halved peaches on the second tray. There should be some space between all the halves. Otherwise, they will become mushy and will look unpleasant.
  8. In the small bowl mix 0.5 tbsp of the maple syrup and pumpkin spice mix. If you like, you can also add vanilla to taste. Brush each peach with this spicy mixture carefully. Use only a half of the liquid now. When you`ll bake them, they`ll be nicely caramelized.
  9. Baked your peaches for 15-20 minutes until they are soft enough. Do not overcook them! If your peaches are ripe, cook them for 10-12 minutes.
  10. The most interesting part of the recipe is forming the dessert on the small plates. Transfer 2 peaches to the plate. Add a portion of crunchy and sweet granola. Top everything with the rest of spiced maple syrup.

To make this dish even more perfect and sweet, serve it with a portion of the ice cream, fresh ricotta or tender yoghurt. Serve it immediately until ice cream melts. If you like, you can also add a pinch of cinnamon on the top of each portion.

 You can also change this recipe a little. Stuff fresh peaches with tender ricotta before topping it with sweet syrup. You can also decorate each portion with granola or nuts immediately. In this case you dessert will be even sweeter.
