Ravioli with Spinach and Cheese

Traditional Italian dumplings may be filled with anything you like. It may be yummy chocolate, meat or even vegetables.

Instructions:
  1. Defrost and dry spinach. Mash it, using a powerful blender. Melt butter in the frying pan. Stew spinach on the slow fire for 10-20 minutes. Leave it to cool down and mix with soft cheese.
  2. Wash and wipe parsley. Chop it. Mix it with breadcrumbs, nutmeg, grated cheese and eggs. Add this mass into the bowl with creamy mass. Add salt and pepper and mix everything one more time.
  3. Whip eggs. Add salt and oil. Slowly add the flour. Mix the dough until it`s non-sticky. Cover it with the plastic wrap. Leave the dough for an hour. Flatten two parts of it.
  4. Add small portions of the filling. There should be a distance between the piles of the filling. Put the second layer on the top of it. Cut ravioli into squares. Leave them for 10 minutes. Boil ravioli in the pan with the salty water.
  5. Take ravioli out of the pan and put them on the plate.

Serve ravioli with melted butter. If you like, you may add grated cheese as well. Bon Appetite!
