Homemade ice-cream is a perfect dessert for a hot summer day! It is tender, smooth, sweet enough and very tasty. In order for your dessert to be that amazing, use only fresh ingredients. Find fat cream (with 30-33% fat content). You also need to buy fresh eggs. As for the sugar, choose the perfect amount of sweetener to your taste.

Instructions:
  1. Prepare all main ingredients. You may use either fresh or frozen raspberry.
  2. Cook “foundation” for our homemade raspberry ice-cream. Take a deep bowl and put 3 yolks into it. As for the whites, you may freeze them and use later.
  3. Add sugar and one pinch of vanilla. Whip everything with the whisk or using mixer. You need to make smooth mass.
  4. Pour milk into the bowl.
  5. Put this bowl on the water bath. Take a pan, boil 250 ml. of water in it and put the bowl on the top of this pan. Cook cream, stirring it constantly until it`s soft. It usually takes 10 minutes.
  6. This consistency should remind you of condensed milk. Leave it to cool down. If you want to cope with the process quicker, put the bowl into big pan with cold water.
  7. Rub berries through the sieve in order to get rid of seeds. You may use leftovers for cooking fresh raspberry tea.
  8. What we need is that attractive raspberry mousse.
  9. Mix it with cream. It should be already cold.
  10. Make this mass smooth.
  11. Whip cream very well.
  12. This mass should be soft and smooth. Don`t whip it for too long. Otherwise, you`ll get butter and whey instead of whipped cream.
  13. Mix whipped cream with the rest of ingredients. Whip this mass until smooth.
  14. Put this tender mousse into the container. Cover it with the lid and put it into the freezer.
  15. I recommend you to take it out of the freezer regularly and mix. In this case there won`t be ice in the tender mass. Mix it every 30 minutes until it’s frozen.
  16. That`s it! Your homemade raspberry ice-cream is ready. Treat yourself and your family members with this dessert.
