Rabbit with White Wine. Exquisite and Light Dinner

Instructions:
  1. Take a large pot with a thick bottom and add vegetable oil.
  2. To cook this dish, you will need to use either 2 small rabbits or a big one. Rub the meat with salt and pepper.
  3. Cook the meat slightly until it is light brown in color. When meat is ready, transfer it to a plate covered with paper towels to absorb the excess oil.
  4. Pour 2-3 tbsp of white wine in the pot with the leftovers of oil and meat fat. Reduce the heat and cook the bacon until crispy. Cook it from both sides and transfer to the plate as well.
  5. Chop onion carefully and cook it together with the leftovers of fat for 1-2 minutes. Stir the onion from time to time so as not to burn it.
  6. Take a medium-sized bowl and combine 2 cups of vegetable broth or chicken stock with the leftovers of wine and Dijon mustard.
  7. Add minced garlic to the pot with soft onion. Cook everything for a minute.
  8. Now you can add rabbit and all the slices of bacon to the pot again. Pour in your marinade and add fresh rosemary,
  9. Simmer this dish for 30-40 minutes. If your meat is not tender enough, you can cook it for an additional 20 minutes. It isn't that fast, but the result is amazing and definitely worth trying.
  10. Add butter and spices to taste. This way your homemade dinner will have a richer taste.

Serve parts of chicken with a portion of broth, several slices of bacon and fresh herbs. If you like, you can also add a portion of white rice or noodles.
