Potato Pumpkin Breakfast Pancakes
I want to share with you the recipe of delicious pumpkin potato pancakes with mushrooms. They are perfect for breakfast. This dish is rather nutritious, so it will fill you with energy. Yummy pancakes are very tender, so they really melt in the mouth.

Grate pumpkin and potato on a coarse grater or mash them using blender.
Add raw egg and mix everything well.
Grate champignons and mix them with grated vegetables. Add salt and pepper.
Then add flour and mix all these ingredients one more time.
Pour oil into the pan. Form small pancakes in this pan, using tablespoon.
Fry them from both sides.
This dish tastes great in combination with sour cream or homemade mayonnaise.
