Potato pancakes with interesting fillings are popular in our family. Recently, I`ve tried new potato pancake recipe. Snack with chicken and mushrooms was a great success.

  1. Preheat frying pan and lubricate it with vegetable oil.
  2. Cut chicken fillet into small cubes and fry.
  3. Add into the pan sliced mushrooms and fry for several minutes, constantly stirring.
  4. Pour cream into the pan and add grated cheese. Mix everything well. Take frying pan out of the oven.
  5. Now you may start cooking dough for potato pancakes. Grate potatoes and onion. Break two eggs into the bowl. Salt and pepper to taste.
  6. Add flour and mix the dough well.
  7. Lubricate frying pan with vegetable oil and start frying big potato fritters.
  8. When the pancake is half-ready, it`s time to bake it on the tray, covered with baking sheet.
  9. Bake potato pancakes for 5 min. at 425 °F .
  10. When it`s ready, put it on the plate and fill the half of surface with delicious chicken and mushrooms. Wrap pancake by half.

Serve this dish when it`s cooled down. You may also decorate it with greens or add your favourite sauces. Unlike lots of boring stuffed potato recipes, this one is creative and interesting. Try it, and you won`t be disappointed.
