Potato Hashbrowns with Cabbage

  1. For cooking this dish we recommend to use Yukon Gold potatoes. Prepare it beforehand. Add potatoes to the pot. Do not peel it beforehand. Add salt to taste and cover everything with water.
  2. Bring everything to boil. Now reduce the heat and simmer everything for 20 minutes. You can cook potatoes the day before you are going to make hashbrowns. It won`t spoil the taste of the dish.
  3. Now you need to chop fresh cabbage. Slices should be thin and not too big.
  4. Melt 1 pcs of the butter in the pan. Add chopped onion into it. Salt everything to taste. Saute onions for several minutes until they are soft and tender. It will take about 10 minutes.
  5. Add chopped cabbage to the pan as well. Continue cooking everything for 5-8 minutes. It depend on your taste. If you want to make your hashbrowns crunchy, cook cabbage for 5 minutes. If you prefer tender pancakes, continue cooking everything for a longer period of time.
  6. Now turn off the heat and leave cabbage and onion in the pan.
  7. In the meantime, prepare potatoes. Cut each one in two pieces. Preheat the frying pan one more time and pour in vegetable oil. Cook boiled potatoes for 15 minutes. It will be fragrant and caramelized.
  8. When you`re done, take potatoes out of the pan and mash them carefully. Mass shouldn`t be too smooth. Make it a little chunky.
  9. Add potato to the pan with cabbage and onion. Cut the rest of the butter into slices and add them to the pan as well. Mix everything using wooden spatula.
  10. Add fresh chopped parsley and salt to taste.
  11. And now it`s time to get down to the most interesting part of the recipe. Preheat frying pan with the leftovers of fat and start forming small pancakes on it. Cook each one for 5 minute from both sides over medium heat. Your meal will become tender and crunchy at the same time. Do not overcook hashbrowns otherwise they will simply burn.
