Potato Croquettes with The Filling
This yummy and nutritious snack is something you may cook even for a festive meal. Today I want to share with you the recipe of delicious croquettes with yummy filling. They have crunchy golden crust and juicy filling. They are best eaten warm. You may serve them with garlic sauce or tartar.

Wash potato, peel and put into the pan with salty water. Do not peel vegetables. Boil potato until it`s soft. It will take about 15-25 minutes. Stick it with the fork or toothpick in order to check whether potato is ready
Put potato into the bowl and leave it to cool down
Now it`s time to cook the filling. Wash chicken fillet and boil it in the salty water for 20-25 minutes
Wash mushrooms. You may use either champignons or oyster mushrooms. Cut off stalks and chop caps. Pell onion and chop it as well
Fry mushrooms and onion into preheated pan, lubricated with oil. Cook vegetables until they are soft
Cut chicken fillet into small pieces. Add these pieces into the pan and fry it together with mushrooms for 2-3 minutes. Add salt and pepper. Turn the fire off and leave everything to cool down.
Peel potato and grate it. Add egg, salt and pepper. Mix everything until smooth.
Form small pancakes and fill them with the stuffing. Then form a ball with the stuffing inside. Roll it in breadcrumbs
Put these croquettes into the tray, covered with baking paper. Bake at 356-374 degrees for 20-25 minutes
