  1. To cook this Mexican soup, you can use roasted pork leg. Cut all the meat off the bone and chop it up. Add salt and pepper.
  2. Peel chilies and slice them carefully. We recommend using both Guajillo chili peppers and Ancho chili peppers.
  3. Preheat a large pot with the oil. Add pork and cook it until it has a nice brown color. To add flavor to the dish, cook meat together with the bone. Take it off the bone when your pork is ready.
  4. Add minced garlic and chopped onion. Cook for 1-2 minutes and add chili pepper together with Mexican oregano, bay leaves and salt to taste. Pour in the broth. You can replace it with water as well.
  5. Cover the pot with the lid and bring your soup to boil. Reduce the heat and cook your soup for about an hour.
  6. Remove the bay leaves and meat. Mash all the ingredients, using a powerful blender. Shred the pork carefully and add it into the pot with puree again.
  7. Add hominy. This is the most important ingredient. Hominy is dried corn kernels, soaked in water with lime juice. Sour water helps to remove the tough husk. To cook this soup you need to use rinsed hominy.
  8. Mix everything carefully. If you want your soup to be less thick, add more broth or water.
  9. Add lime juice and more spices to taste.

Serve this Mexican soup warm. It will be very tasty and comforting.  

You can top this delicious soup with chopped cilantro, chili pepper or slices of avocado. Red Posole should be traditionally serves with radish and crunchy tortilla chips as well.
