  1. Start cooking this simple dish by cleaning the mushrooms. Wash all of them using a soft brush. Be careful and clean each mushroom, getting rid of the dirt. Wash them in cold water. Dry each of them with a towel. Now you can get down to cooking. Preheat the oven to 400 F. Cover a baking tray with baking paper.
  2. Put the caps of the mushrooms into the baking dish. Do not get rid of the stems as we are going to use them later.
  3. Take a small bowl and mix olive oil with 0.5 tsp of salt, pepper and thyme in it. Sprinkle the mushrooms with this fragrant oil. Bake the mushrooms for about 10 minutes.
  4. In the meantime, chop the mushroom stems. Cut onions into thin slices and mince garlic. Fry all these vegetables in the frying pan until they are soft enough. Add oregano to make the dish more fragrant.
  5. Remove the pan from the heat. Transfer everything into a large bowl. Toss everything with chopped parsley.
  6. Fill each mushroom with this yummy mass. Grate hard cheese on the coarse grater. Decorate each portion with the cheese.
  7. Sprinkle everything with the lemon juice. Bake your snacks for 20 minutes.

 Now you’re done. Serve the mushrooms with fresh herbs and slices of vegetables.

There are several alternative ways to cook this yummy dish. Instead of the vegetable mix, you can use:

  •         Sausages or meat. The best choice is Italian sausage; cut it into small cubes and mix with the cheese. You can do the same with roasted or grilled chicken;
  •         Add cream cheese. You can mix it with any type of meat with the chopped stems of mushrooms;
  •         Choose ground beef or turkey. You can mix it with tomato pasta and herbs and get the best stuffed mushrooms ever.

 If you want to make the meal more nutritious, serve the stuffed mushrooms with roasted vegetables, light salad or mashed potatoes. Such a garnish will make your meal more filling.
