These yummy pancakes, stuffed with cottage cheese and raisins are very tender. I will share with you simple recipe of pancakes. They`re always elastic and tender. As for the stuffing, you may add vanilla, cinnamon or citrus zest into the bowl with cottage cheese.

  1. Mix all the ingredients and fry pancakes. Do not cook them for too long.
  2. I prefer to use granulated cottage cheese. However, you may choose smooth cheese mass. Put it into the bowl and mix with sour cream and sugar. You may add a pinch of salt if you like.
  3. Wash raisins and put them into the bowl with warm water. When raisins are soft, add them into the pan with cottage cheese.
  4. Now let`s get down to stuffing pancakes. We`ll cook triangles. Put cheese with raisins on the one half of pancake.
  5. Cover it with the second half.
  6. Fold it in two again.
  7. Now you may fry them.
  8. There is one more way of stuffing pancakes. Put cottage cheese on the half of the pancake. Form an envelope.
  9. Preheat the frying pan and pour vegetable oil into it. Fry pancakes from both sides.

Serve these pancakes with sour cream, honey or berries. You may also dust them with sugar powder. Such a dessert is very tasty!
