This dish cannot be considered exquisite. It`s a simple and very available food. Classically it is served with the sauce. The only one drawback to this easy oxtail recipe is that it is quite time-consuming to cook the meat. The first step is to slice the tails and leave them in the cold water for 24 hours. After that, the tails will be clean and soft. Then you’ll need to strain the water and immerse the tails in a bowl of red wine for 12 more hours. The tails will turn violet in colour.

Instructions:
  1. In a pan with a thick bottom add olive oil and fry chopped bacon or lard. Cook it for several minutes. Add the slices of the previously prepared oxtail and mix all the ingredients for 5 minutes.
  2. Add chopped onion and grated carrot. Mash garlic and chop parsley. Mix all these aromatic ingredients with oxtails.
  3. Stir everything constantly for about 10 minutes. Pour 400 ml of the dry white wine. Cover the pan with a lid and stew everything for 20 minutes on a low heat.
  4. In the meantime, cook the sauce. Cut the top of the tomato crosswise and dip it into the pan with the boiling water for a minute. Peel it and blend it, using a powerful blender.
  5. Add this mass into the pan as well. Dust all the ingredients with some salt and pepper. Cover the pan with a lid and stew everything for a minimum of 2 hours. If the meat is still not ready, continue cooking the dish. At the end of cooking, it should be easy for you to separate the meat from the bones. If the water evaporates while cooking, add more liquid.
  6. Fill a small bowl with raisins and add hot water. Leave them for 10 minutes for them to become soft. Cut the celery into thin slices. Sauté these ingredients for several minutes. Then add the sauce and finally, the cocoa powder.
  7. Add the celery and raisins into the pan with the oxtails. Depending on your preference, you can also add nuts. Stir everything carefully and stew for 15 minutes.
