In a day, the tails will be clean and soft. Then you`ll need to strain the water and put them into another bowl with the red wine. Leave them for 12 more hours. The tails will become violet.

Instructions:
  1. Take a pan with the thick bottom. Add olive oil and fry chopped bacon or lard. Cook it for several minutes. Add the slices of the oxtail and mix all the ingredients for 5 minutes.
  2. Add chopped onion and grated carrot. Mash garlic and chop parsley. Mix all these spicy ingredients with oxtails.
  3. Stir everything constantly for about 10 minutes. Pour 400 ml of the dry white wine. Cover the pan with the lid and stew everything for 20 minutes on the slow fire.
  4. Meanwhile cook the sauce. Cut the top of the tomato crosswise and dip it into the pan with the boiling water for a minute. Peel them and mash, using a powerful blender. Add this mass into the pan as well. Dust all the ingredients with the salt and pepper. Cover the pan with the lid and stew everything for not less than 2 hours. If the meat is still not ready, continue cooking the dish. At the end of cooking, it should be easy for you to separate bones and meat. If the water disappears while cooking, add more liquid.
  5. Fill the small bowl with the raisins and add hot water. Leave it for 10 minutes for it to become soft. Cut celery into thin slices. Sauté these ingredients for several minutes. Then add the sauce and cocoa powder.
  6. Add celery and raisins into the pan with the oxtails. If you like, you may also add nuts/ Mix everything carefully and stew for 15 minutes.
