Muffin with Cottage Cheese and Raisins

  1. Wash raisins and put them into the bowl with boiling water.
  2. Grate lemon zest.
  3. Take butter of the fridge beforehand and leave it to melt. When it`s soft, you need to whip it using a mixer.
  4. Add cottage cheese and mix everything until the mass is smooth.
  5. Slowly add eggs one by one.
  6. Sift the flour through the sieve. Add salt and baking powder. Mix these dry ingredients with smooth mass. I recommend you to use the spoon.
  7. Add lemon zest and raisins. Mix everything one more time.
  8. The dough will be rather thick.
  9. Preheat the oven to 338 F. Lubricate the pan with the soft butter. If you use silicone form, you won`t need to use butter.
  10. Fill the form with this thick dough and make the surface of the muffin smooth.
  11. Put the form into the preheated oven and start baking your muffin. You`ll need to cook it for 20-30 minutes. Then you need to slow down the fire and continue cooking this dessert for 30 more minutes. Check whether the dish is ready, using a wooden toothpick.
  12. Leave the muffin to cool down. Turn the form over.
  13. The cake will be fragrant, soft and really tender.
