Instructions:
  1. Not to spoil the texture, keep in mind that the whites shouldn’t get in contact with water. Whip the whites in a dry bowl, using a dry mixer.
  2. Boil water in a pan, then put the bowl with the whipped whites on top of this pan and cook the whites on the water vapour. Add the sugar and stir everything constantly until the sugar melts, for about five minutes.
  3. Pour the warm egg whites into the bowl and whip them once again with a mixer. Add lemon juice mid-way during the whipping process. The mass will grow in size.
  4. As the mass becomes very thick, add the starch, mixing it in gently with the silicone spatula.
  5. Fill a pastry bag with this tender mass. Cover a baking tray with the baking paper or silicone sheet. Baking tray mini cakes. Put the tray into the preheated oven. Bake the dessert for an hour at 176 F. The oven temperature should be very low for the dessert to be white, not cream-colored.
  6. Take the tray out of the oven. Don’t forget to decorate each portion of the dessert. There are a lot of interesting Pavlova toppings. You may choose whipped cream, cream cheese or mascarpone. Irrespective of the topping, this dessert should be prepared immediately before consumption, to avoid it becoming soggy.
