Instructions:
  1. Not to spoil the texture, keep in mind that the whites shouldn`t contact with water. Whip whites in the dry bowl, using the dry mixer.
  2. Fill the pot with the water. Boil it. Put the bowl with the whipped whites on the top of this pan. Add sugar. Stir everything constantly until sugar melts. It will take about five minutes.
  3. Pour warm whites into the bowl of the blender and whip them using mixer one more time. The mass will grow in size.
  4. In the middle of the process of whipping you`ll need to add lemon juice.
  5. As soon as the mass is very thick, you may add the starch. Mix the mass with the silicone spatula slowly.
  6. Fill the pastry bag with this tender mass. Cover the tray with the baking paper or silicone rug. Form mini cakes. Put the tray into the preheated oven. Bake the dessert for an hour at 176 F. The temperature should be very low for the dessert to be white not cream-colored.
  7. Take the tray out of the form. Don`t forget to decorate each portion of the dessert. There are a lot of interesting pavlova toppings. You may choose whipped cream, cream cheese o mascarpone. Still, all of those cakes should be eaten quickly for the dessert not to get wet.
