Mashed Potato Pancakes
If I have leftovers in the fridge, it`s a great chance to cook yummy mashed potato pancakes. This dish is simple and tender. Its taste depends on the rest of the ingredients you add.
Take a bowl with mashed potatoes and add raw egg, grated cheese, wheat flour, salt and pepper into it.
Mix everything well. If you need, add more salt.
Form small balls.
Add two tablespoons of flour into the plate. Flatten potato balls and roll them in dough from both sides. Get rid of extra dough.
Preheat frying pan, filled with , tablespoons of oil. Fry these small pancakes from both sides until they`re golden-yellow.
That`s it. You may enrich the taste of your pancakes by adding mashed garlic, fried onion, chopped dill, cilantro or parsley. One more idea is to use breadcrumbs instead of the flour. In this case, your pancakes will be crunchy and very tasty. However, you may cook them without tempura.
Serve pancakes with sour cream, milk sauce or fresh salad. Bon Appetite!
