Lithuanian cold soup

This cold soup is very popular in Lithuania. If you go there in summer, you may try this dish in the most of restaurants and cafes. However, you may cook this dish at home as well. Here is the recipe for you.

Yoghurt
1,5 l. (choose fat one)
Beet root (fresh or marinated)
3,3 cup
Cucumbers

1 small beam
Green onion
several sprigs
Salt, sugar

Instructions:
  1. Take raw beetroot and cover each vegetable with several layers of the tinfoil. Bake it at 374 degrees for 1 hour. Cool it down, peel and grate on the coarse grater. Put it into the pan, add cold water. This liquid should cover vegetables. Boil it and cook for 5 minutes. Then you need to cool it down and put into the fridge for an hour. If you use marinated beetroot, cut it into thin strips. You can make this dish spicier by adding marinade into the pan.
  2. Cook hard-boiled eggs and peel them. Chop 4 eggs. Take another 4 eggs and cut each one in 2.
  3. Peel cucumbers and grate them or cut into small cubes. Chop herbs.
  4. Add cucumbers, chopped eggs and herbs into the bowl with beetroot. Pour yoghurt into the bowl. Add sugar to taste. Put this mass into separate bowls.
Decorate each portion with the half of the egg. Your fresh soup is ready! Bon Appetite!
