Lemon soufflé cake

Ingredients for
1 cup
Baking soda
0.25 tsp
Sugar powder
0.5 tbsp
0.5 cup
Boiled yolks
2 pcs
Almond flour
2 tbsp

Lemon zest

25 ml
Cream (with 33% fat content)
400 ml

  1. Mix flour, baking soda, sugar powder, mashed yolks, zest and salt. Make the soft dough. Cover it with the plastic wrap and put it into the fridge for an hour.
  2. Roll the dough and put it into the baking form. Cook it for 10-15 minutes at 374 degrees.
  3. Mix gelatin with 120 ml. of water. Separate yolks and eggs. Whip yolks with 2/3 sugar, lemon juice and zest. Then whip whites with the rest of sugar. Whip cream until it`s very thick. Combine these 3 masses carefully. Slowly add gelatin into the bowl and mix everything one more time.
  4. Cover the cake with this tender soufflé and put it into the fridge for 3-5 hours.
