Instructions:
  1. For cooking this simple dessert, you should buy or prepare pie crust beforehand. It will save much time!
  2. Preheat the oven to 375 F and cook your frozen pie crust for 20 minutes, following the instructions on the package. Take the tray out of the oven and stick it with the fork in several places. Bake the crust for 10-15 minutes.
  3. In the meantime, prepare tender and flavorful filling. Take middle-sized bowl and whisk 5 egg yolks in it.
  4. Mix dry ingredients: 5 tablespoons of cornstarch with sugar and salt. Add them to the pan with 1.5 cup of water and mix everything carefully. Bring the liquid to boil, stirring constantly. Reduce the heat and mix it for several more minutes for this mass to become thicker.
  5. Remove the pan from the oven. Stir in this mass into the bowl with whipped yolks.
  6. Transfer everything back into the pan and heat everything, stirring for 3 minutes.
  7. Turn off the fire. Add juice of one lemon and 2 tsp of lemon zest. Stir in soft butter.
  8. Preheat the oven to 325 F. In another saucepan combine 1 more tablespoon of cornstarch with 0.25 cup of cold water. Heat it mixing constantly. In several minutes when this liquid is thick as well, remove the pan from fire.
  9. Combine cream of tartar with sugar.
  10. Now it`s time to make tender meringue. Whisk egg whites with vanilla on the low speed. The mass should be smooth and fluffy.
  11. Slowly stir in cream of tartar and sugar together with the thick sauce.
  12. Now you can form the dessert. Fill the pie crust with tender airy mass with lemon flavor. Top everything with light meringue.
  13. Bake your easy treat for 20 minutes. Leave it to cool down completely. Now you can cut it into pieces and serve.
