Instructions:
  1. Wash the lemons carefully. Peel the zest and grate it. Squeeze the lemon’s juice. There will be about 80 ml of fresh juice.
  2. Take a glass bowl and mix egg yolks with the sugar, lemon juice and zest in it. Mix everything until the mass is smooth.
  3. Pour water into a pot and boil it. Lower the heat. Put the pot with the whipped egg mass over it and cook the cream until it gets thicker. Stir everything constantly so that there aren’t any yellow lumps.
  4. Cut tender soft butter into pieces. Add them into the pan as well, waiting until each slice melts.
  5. Take the pot off the heat. Strain everything slowly. Cover the bowl with some plastic wrap.
