I like citrus fruit since my childhood. They are delicious and healthy. When I grew up I, started search for new recipes with those fruits added. Today I want to share with you the recipe of my favourite lemon cake. Powdery dough, sour-sweet zest and tender meringue make this dessert perfect. That sounds pretty good, doesn`t it? Don`t waste your time and get down to cooking!

  1. Mix salt and flour. Then add several pieces of cold butter and mix it until the dough turns into crumbles. Put it into the bowl and add yolks together with water. Well mixed dough should be cooled down. So put it in the fridge. I also suggest you to cover it with plastic wrap before rolling.
  2. The size of the flattened dough depends on the size of your baking form.
  3. Put this dough into the form. Cut the edges. Bake it at 392 degrees for 20 minutes. Take it out of the oven and lower the temperature to 338 degrees.
  4. Mix sugar, salt and water in the small pan. Put it on the fire and boil.
  5. Take another bowl and mix starch and water in it. Slowly whip it with the whisk and add it into the bowl with boiling syrup. Cook it until the syrup is thick and colourless. Then take it off the fire.
  6. Mix yolks and lemon juice in the cup. Slowly mix it with the syrup and boil it once again, stirring.
  7. As soon as the syrup starts boiling, add grated lemon zest and butter into the pan. Put it in the fridge and leave for several minutes to cool down.
  8. Find big bowl and mix egg whites with salt in it. Whip it. Then add sugar and continue whipping. At the end, there should be thick froth in the bowl.
  9. Add ¾ of whipped whites into the lemon mass. It should be warm.
  10. Fill baked pastry with this soft lemon filling. Cover the cake with the rest of whipped eggs.
  11. Put the form into preheat oven again and bake at 338 degrees for 15 minutes.
  12. Leave it to cool down for 1-1,5 hour before treating your guests with this dessert.

You may say that this “best lemon cake recipe” is too difficult and cooking such a dessert takes too much time. However, if you try this yummy birthday cake, you won`t regret. Its taste is amazing!
