Lemon Cake with Tender White Cream


Latin word cake means “round pie”. In fact, it`s a yummy open dessert. This dish is available and easy to cook. You`ll waste minimal time on the decoration of this dish.

  1. Take eggs and butter out of the fridge beforehand. Break 5 eggs. Separate yolks and whites. Leave 1 egg untouched. Put whites into the fridge. You`ll use them later while cooking cream. Yolks will be used for cooking the dough.
  2. Grate the lemon and squeeze its juice.
  3. For cooking this cake you`ll need a powerful mixer. Add melted butter, o.5 cup of sugar, vanilla and yolks into the bowl. Add one more egg (the one you`ve left untouched).
  4. Mix everything carefully until this mass is smooth. Add lemon zest and continue mixing the dough. This ingredient will make your dessert fragrant.
  5. Add baking powder or baking soda, mixed with the lemon juice. Add this mixture in the bowl with the dough.
  6. Cover the tray with baking paper. You do not need to dust it with the flour or lubricate with oil. Fill the tray with the dough and flatten.
  7. Bake this layer in the oven, preheated to 392 F for 15-20 minutes. In fact, time of cooking depends on the thickness of the layer.
  8. When the dough is ready, take it out of the oven and leave it to cool down. Turn it over and get rid of the baking paper.
  9. Take cold dough and cut off the edges.
  10. Turn these leftovers into crumbs. You`ll use it later for decorating the cake.
  11. Cut the dough in several pieces, forming small cakes.
  12. Take cold whites out of the fridge. Whip them with a pinch of salt, using powerful blender.
  13. Mix gelatin with 50 ml of water. Add a cup of sugar. Heat this mixture in the pan. Do not boil it. All you need is to melt gelatin.
  14. When you`re done, add gelatin into the bowl with whipped whites.
  15. At the end this whipped cream will be smooth and thick.
  16. Cover the dough layer with it.
  17. Leave everything to cool down in the fridge for several hours.
