Lean Olivier Salad with Mushrooms
Recently I`ve tried lean Olivier salad with mushrooms in one of vegetarian restaurants. I liked it so much! It`s one of the easiest salad recipes. You can cook it at home without wasting much money on ingredients. I tried to make it several times at home and found the perfect recipe. Homemade Olivier with sauteed mushrooms is as tasty as in the restaurant.

Wash champignons, dry them with the towel and cut into small squares. Salt mushrooms and fry on the pan, lubricated with the vegetable oil until the liquid disappears. Then leave them to cool down. You can use wild mushrooms as well. However, don`t forget to boil them before frying. Boil once for 5 minutes. Then strain it and boil one more time.
Peel boiled carrot and potato. Cut them into small cubes. Perfect size is 0,7 x 0,7 mm. It`s recommended to boil veggies beforehand. If you do it in the evening, they will cool down, and it will be more comfortable to work with these ingredients. What`s more, cold vegetables are not sticky.
Cut cucumbers and pickles into small squares. Chop green onion.
Mix mushrooms, carrot, potatoes, cucumbers and onion in the bowl. Add canned green peas and mix everything once again. If you wish, you can salt this dish.
Finally, leave the salad for 15-20 minutes.
