Juicy Chicken Kyiv with Garlic Butter

History of the Recipe:

Four countries claim to be the place where this recipe was invented.

1.    French version. In France this dish is famous as «cotelettes de volaille». This simple chicken chop was filled with the sauce instead of the frozen butter. Sometimes egg yolks were used instead.

2.    Russian version says that this tender chicken recipe was invented in Sankt-Petersburg in 1912 year. Later was the revolution and ordinary people couldn`t allowed themselves to eat such a food anymore.

3.    Ukrainian version. Due to this version the recipe was invented in the 18th century. Later, in the 1940th, it become popular again. Kyiv chiefs changed the recipe and the way this dish is served. Since then this is one of the most popular chicken meals in many Eastern countries.

4.    Finally, there is an American version. This dish could be invented in America, in the beginning of the previous century. This Eastern name means either than American restaurants wanted to attract the visitors from the Europe, or that this dish was invented by the one of the visitors.

So, the history of the meal is the mystery. What we really know is that this dish is pretty high calorie. So, be careful and avoid cooking such a yummy delicacy too often.

  1. Prepare soft butter and fresh dill. Chop the dill carefully and mix it with butter and salt.
  2. Fill the plastic wrap with this mass. Form a tight roll and put it into the fridge.
  3. Meanwhile prepare the poultry. Wash chicken fillet carefully and wipe it, using paper towels.
  4. Cut chicken fillet almost up to the end. Pound poultry and rub it with the salt from the both sides.
  5. Take the cold butter out of the fridge. Cut it into pieces and put a piece of the filling into the middle of the each slice of meat.
  6. Cover it with the smaller part of the fillet.
  7. Form an oval chop. Cover it with the plastic wrap and put into the freezer for 15 minutes. In this case, the chop will have a nice form. Fill the bowl with the flour and breadcrumbs.
  8. Take a separate bowl and whip eggs with the salt in it.
  9. Roll the chop in the mixture of breadcrumbs and flour. Dip it into the bowl with the whipped eggs.
  10. Repeat this process one more time.
  11. Preheat the pot with the vegetable oil. Dip the chop into the pot. The oil should cover it.
  12. Cook Chicken Kyiv for 3-4 minutes from both sides.
  13. Take the chop out of the pot and put it on the paper towel to get rid of the extra oil. Preheat the oven. Bake yummy chop in it for 10 minutes.
